Ingredients (for 2 persons)
- 125 g flour
- 2 eggs
- 250 ml milk
- 50 ml mineral water
- 1 pinch of salt
- 20 g melted butter
- A little butter for frying
To serve:
- 30–40 g caviar (of your choice)
- 80–100 g crème fraîche
- 1–2 tbsp finely chopped chives
- a little lemon zest
- black pepper to taste
Preparation
1. Prepare the batter
Put the flour and salt into a bowl. Add the eggs and milk and whisk until you have a smooth batter. Stir in the mineral water and melted butter.
2. Leave the batter to rest
Leave the batter to rest for about 15 minutes. This will make the crêpes particularly tender.
3. Cook the crêpes
Heat a non-stick frying pan over moderate heat and grease it very lightly with butter. Pour in a small ladleful of batter and swirl the pan so that the batter spreads thinly. Cook for about 1 minute until the underside is lightly golden brown. Flip and cook the other side for a further 20–30 seconds. Repeat with the remaining batter.
4. Serving
Spread a thin amount of crème fraîche over the warm crêpes. Sprinkle with a little chives and finely grated lemon zest.
5. Add the caviar
Finally, place a small portion of caviar on each crêpe. Fold loosely or roll up and serve immediately.
Everyday tip
You can prepare the crêpes in advance and keep them in the fridge. Warm them up briefly just before serving. Then, add the crème fraîche and caviar. This way, a simple crêpe can be transformed into a special dinner in just a few minutes.
