Disposer le saumon sur du papier sulfuris\u00e9, le saler l\u00e9g\u00e8rement et le frotter avec de l\u2019huile d\u2019olive. Chauffer le fond de poisson, y ajouter lentement la cr\u00e8me fra\u00eeche, stopper la cuisson et garder au chaud. Affiner et assaisonner avec le jus de citron.<\/p><p>Mettre le saumon au four pour 5 minutes.<\/p><p>Pour les \u00e9pinards : mettre une casserole sur le feu avec l\u2019huile d\u2019olive puis ajouter les \u00e9pinards, l\u2019oignon et l\u2019ail. Assaisonner et laisser mijoter bri\u00e8vement. Egoutter les \u00e9pinards dans une passoire.<\/p><p>Presser l\u00e9g\u00e8rement les \u00e9pinards et les disposer dans une assiette creuse. Verser la sauce autour des \u00e9pinards.
