Peler les betteraves rouges et les couper en rondelles. Pour ceux qui savent appr\u00e9cier une jolie pr\u00e9sentation, on peut \u00e9galement les couper \u00e0 l\u2019emporte-pi\u00e8ce. Assaisonner les rondelles de betterave rouge avec l\u2019huile d\u2019olive, le vinaigre de Sherry, le sel et poivre et dresser joliment.<\/p><p>M\u00e9langer le s\u00e9r\u00e9 maigre au zeste de citron puis dresser sur les betteraves rouges \u00e0 l\u2019aide d\u2019une poche \u00e0 dresser.
